spiced apple-pear pie

because i made a pie


and you can make it too.

spiced apple-pear pie:


pie dough

1/2 stick butter

3 pears, peeled and sliced

5 apples, peeled and sliced

zest and juice of one lemon

2/3 cup sugar, plus extra for crust

2 tbsp molasses

1 tbsp fresh ginger

1 tsp cinnamon

1/4 tsp salt

1/4 tsp fresh nutmeg

1/4 cup flour

vanilla bean, scraped

several sprigs fresh thyme

one egg, beaten


preheat your oven to 425.

in a large skillet over medium heat, melt butter. Then add fruit, lemon juice, sugar & molasses, ginger and dry spices. cook for about 10-15 mins until liquid slightly evaporated. add flour and cook another 2 mins until thick. stir in vanilla bean and thyme and let cool.

on a floured surface, roll out half of your dough and transfer it to a glass pie dish. fill with your fruit filling. roll out the remaining dough and top the pie with your desired decoration. crimp edges and brush with the beaten egg. sprinkle with additional sugar.

bake for 15 minutes. lower temperature to 375 and bake an additional 50 mins, covering the crust in aluminum foil if beginning to brown to quickly. remove from oven and let cool. serve with cardamom-maple whipped cream.


to make whipped cream: whip desired amount of heavy whipping cream until it forms soft peaks. add maple syrup and cardamom bitters to desired sweet-n-spiciness.
